Decadent Chocolate Cake

4ozs unsweetened baking chocolate
1/2 cup unsalted butter
1 tblsp tap water
3/4 cup stevia
2 tblsp cocoa powder
1 tsp vanilla extract
6 large eggs ( whole egg)
Heat oven to 180c grease and line an 20cm springform pan
Melt chocolate, butter and water in a microwave dish for 2 minutes at 50% power. Stir, cool to room temperature add 1/4 cup of stevia, cocoa, and vanilla extract stir until combined.
In a medium bowl with electric mixer with the whisk on medium high beat eggs until forms thick ribbons when the beater is lifter about 6 minutes. Reduce speed to medium and gradually add remaining 1/2 cup of stevia and beat until combined, 1 minute. Stir 1/3 of the egg mixture into the chocolate mixture to lighten. Fold remaining egg mixture into the chocolate until well combined.
Pour batter into pan smoothing the top. Bake until evenly risen and almost set 40-45 minutes ( it will look like a brownie) cool completely on wire rack.
To serve light sprinkle of icing sugar a swirl of whip cream and raspberries for decorations
