BBQ Chicken Bacon Caesar Salad

INGREDIENTS
For the salad -
1/4 BBQ Chicken
5 slices of bacon, diced
1 large bag of salad leaves
1/4 cucumber, diced
1/2 large avocado, diced
For the dressing -
1/2 cup of Mayo
● 1 Tablespoon of lemon juice
● 1 teaspoon of mustard
● Salt and pepper, to taste
Serves 2
METHOD
1. In a nonstick pan, add the bacon and cook until crispy, about 4 to 5 minutes.
Set aside.
2. In a bowl, whisk to combine the mayo, lemon juice, and mustard. Season with salt and pepper, to taste.
3. Toss the dressing with salad leaves. Add the cucumber and avocado to the bowl.
4. Add the BBQ chicken
5. Divide the salad between 2 plates and top with the bacon. Use salad for next day lunch.
