Prawns & Avo Mash

Ingredients:

1kg green prawns

• 1/2 cup fresh basil leaves

• 2 garlic cloves crushed

• 1 tablespoon lime rind

• 2 tablespoons peanut oil

• 2 medium avocados

• 2 tablespoons lime juice

• 2 medium tomatoes

• 1 small red onion

• 2 tablespoons fresh basil

 

Instructions:

1. Shell and devein prawns, removing tails and chop up,

2. Combine prawns in a bowl with basil, garlic and lime rind.  

3. Cover and place in the fridge for 2 to 3 hours.  

4. Heat oil in the wok and stir prawns until they change color.

5. Mash the avocadoes with all the ingredients.  

6. Mix well and spoon avo mash into bowls with the prawns.
