Zucchini Beef Saute

4g of carbs per serve 

INGREDIENTS

2 Tablespoons oil, to cook with
2 cloves of garlic, minced or finely diced
400g of beef strips
1 zucchini, chopped

100g of mushrooms
2 Tablespoons of soy sauce
1/2 cup of fresh coriander, chopped
Salt and pepper, to taste

Serves: 2

METHOD:

1. In a large pan, melt the oil over medium-high heat. Add the garlic and saute until fragrant, about 30 seconds.
2. Add the steak to the pan and saute until browned, about 2 to 3 minutes.
3. Add the zucchini and mushrooms to the pan and saute until softened, about 2 to 3 minutes.
4. Add the soy sauce and coriander to the pan and saute for an additional 1 minute. Season with salt and pepper, to taste.
