Alice Springs Chicken

 

1 boneless chicken breast
2 pieces bacon, coarsely chopped
3 to 4 fresh mushrooms, sliced
2 teaspoons butter
1 tsp olive oil
1/2 clove garlic, minced
20 grams cheddar cheese, shredded
A few dashes of Worcestershire Sauce
Salt & Pepper to taste


Season the chicken with the worcestershire sauce, rubbing it on both sides and seasoning with salt and pepper. Add olive oil to skillet and turn on medium high heat. Once skillet is hot, sear chicken on each side for about 3 minutes per side. Transfer to an oven safe pan (or use the skillet if it’s oven safe) and bake until internal temperature reached 150 degrees, about 15-20 minutes. Meanwhile, fry the bacon in a skillet until crisp; drain on paper towels. In the same skillet, sauté the mushrooms and garlic in butter, seasoning with salt to taste. Cook until the juices have evaporated. Place the chicken on a foil-lined baking sheet. Top the chicken with the mushrooms and bacon, then with the shredded cheese. Broil in oven until cheese is melted and bubbly.
