Sweet Chilli Chicken with Almonds

Carbs 6 grams per serve



600 grams of chicken breast (thinely sliced)

1/4 fresh coriander (chopped)

2 Chillies (chopped)

1 tablespoon sesame oil

1 Garlic clove (crushed)

2 Tablespoons peanut oil

1/4 cup sweet chilli sauce

2 tablespoons lime juice

3/4 cup raw almonds

1 cup of snow peas


Marinate the chicken with coriander, chilli, sesame oil and garlic.  Cover and refrigerate for 2 - 3 hours.  

Heat peanut oil in fry pan or wok, stir fry the chicken until brown and cooked through. Add chilli sauce and lime juice and stir fry until boils.  Add almonds and snow peas and stir fry until all is heated through.

Serve immediately 

You can serve with cauliflower rice.
